Oxford Isis was created by Robert Pouget, a French Baron who started making cheese in Oxford after his string of vegetarian delicatessens went bankrupt.
Seeking an alternative to his native land's sticky, squishy Epoisses cheese, he started making Oxford Isis. Instead of washing the cheeses in brandy though, he used local honey mead. The sweetness helps balance its pungent tang.
Soft, almost liquid in the centre and seriously decadent. It's named after the stretch of River Thames between Oxford and the Cotswolds.
