Cornish Yarg was invented in the 1980s by Alan Gray (Yarg is Gray spelt backwards). It's based on a 17th century recipe for nettle-wrapped cheese.
Today Catherine Mead produces it in the small village of Ponsanooth in mid Cornwall. This is a special version of the cheese, wrapped in wild garlic foraged from Cornish woodland.
The cheese tastes fresh, delicate and yoghurty with a subtle whisper from the garlic.
