New in this week is smoked salmon from The Secret Smokehouse in Hackney.
Secret Smokehouse founder, Max, hails from the West Coast of Scotland, where he began smoking fish at a young age. He since trained closer to his new home, Stepney, at London’s Billingsgate Seafood Training School.
After a period working at a fishmonger, Max set out alone, launching Secret Smokehouse from his very own back garden. He now smokes salmon, trout, kippers and haddock in London Fields, and supplies some of the best in the business - from Michelin Star chefs to London’s most exciting new food ventures.
They produce Smoked Salmon to traditional East End of London methods and only works with high welfare fish. All of the salmon is farmed in Scotland, hand-filleted, hand cured with salt only then and oak-smoked on site using traditional techniques. The salmon has a gentle smoke and a ‘melt in your mouth consistency’ which calls for simple preparation—perfect with brown sourdough and a squeeze of lemon or purely on its own.
