Founded by Max, a Scottish West Coast native, Secret Smokehouse draws on traditional fish-smoking techniques Max learned from a young age. After honing his craft at London’s Billingsgate Seafood Training School, he launched Secret Smokehouse from his own back garden before expanding to a dedicated site in London Fields.
Today, Max and his team produce small-batch smoked salmon, trout, kippers, and haddock, supplying everyone from Michelin-starred chefs to London’s most exciting food ventures. Their focus is simple: high-quality, responsibly sourced fish and authentic East End smoking methods.
