A proper tin of Spanish tuna, done the Ortiz way. These are atún claro — yellowfin, mostly caught off the west coast of Africa — hand-packed at the Ortiz cannery on Spain's north coast.
Pinky-fleshed and tender, with a full, distinct tuna flavour that's bold without tipping into strong. This isn't a background-of-the-sandwich tin.
Flake it through salads or sandwiches, or use it the proper way — as the filling for a classic Galician tuna empanada.
