Delicious instant noodles from Eyan, who founded Chilli Chan's during lockdown when she was craving her mother's home-cooked meals. Sun-dried (not deep-fried like most commercial brands), these thick, chewy noodles are packed with flavour from a spicy, umami mushroom XO sauce — a vegan spin on Hong Kong's most luxurious sauce, built from dried hedgehog mushrooms, fermented soybean, ginger and fresh chilli, and a Great Taste 2025 winner.
Boil for 3 minutes, drain, toss with the sauce packet, and top with a fried egg if you're feeling fancy.

These noodles are totally delicious. The sesame oil flavour is my favourite but the Szechuan is also great.
