Curry sauces made to the same recipes used in Gymkhana's two-star Michelin restaurant. Kashmiri chillies bring the warmth, but the real work happens in the onions — caramelised low and slow until rich and sweet, then lifted with roasted fennel and ground ginger.
Perfect for a slow-braised lamb shank, or with meatier fish such as monkfish.
