A uniquely Sicilian pesto, made with naturally abundant wild fennel leaf from the Monti Iblei region of Ragusa, in southeastern Sicily. The aromatic flavour of local wild fennel is traditionally used in many sauces and cured meats — here it's combined with local Avola almonds in a rich tomato base for a lively, creamy pesto with genuine depth.
Enjoy as a pasta sauce, spread on bruschetta, or simply served as a dip alongside cured meats and seafood.
