Chinese fermented black beans form the rich, savoury base of this rāyu, mixed with infused chilli and warming spices like star anise and cinnamon — rich, smoky and miso-like, with back-of-the-throat-warming chilli. A little goes a long way.
Michel Roux himself has named it his desert island ingredient, prizing its depth of flavour and the kick of chilli it brings to any dish.
